Peanut Butter Baked Apples
This is probably one of the easiest and most wonderful things to eat (even if your apple does semi ‘explode’ in the oven..)
None of that ‘extra butter’ is necessary!

Omelet de’ jour of seared salmon, zucchini, and goat cheese? Do you know how many times I don’t eat out at restaurants? (100%). The surprise ‘fried Irish potato’ and side salad had me as happy as a 5 year old with their first McDonalds Happy Meal and toy.
Also: The table bread served at these tables are not your simple Olive Garden rolls. They are serious home-baked loafs with jam and kerrygold butter. Of course I wrapped one up in a napkin to take home so they wouldn’t be wasted…

Green Meadow Farm Swiss Chard, Kennett Square Wild Mushrooms, Caramelized Butternut Squash, Creamy Whole Grain Mustard Spaetzle
AKA: Probably one of the greatest dishes I’ve ever eaten. At a cost of $27 (something I would never buy myself), it was paid for by my Alternative Spring Break organization. It was divine.
Did I mention everything this restaurant cooks is organic and LOCAL? Now that’s amazing.
